Carrot Salad







Ingredients:

Salad:
1 box Jello (any flavor)
1 1/4 cups boiling water
1 1/4 cups pineapple juice
1 cup drained pineapple chunks
1 cup raw, grated carrots
1 cup raw, grated apples

Dressing:
1 - 8 oz pkg cream cheese, room temperature
1 tbs sugar
1 tbs vanilla


Preparation:

Salad:
Mix Jello, water and pineapple juice well in a Jello mold.
When it begins to set, add teh pineapple, carrots and apple.
Refrigerate. When it sets, remove it from the mold and spread on the dressing.

Dressing:
Beat ingredients until light and fluffy. Add a few drops of milk while beating to moisten the mixture.


Trick the kids into eating carrots!
